- 3 cans of chicken broth3 boneless skinless chicken breasts cut into 1 inch chunks1 cup of carrots small ones or cut big ones3 medium potatoes cut into medium chunks1 cup of frozen peas ½ cup chopped onion3 celery stalks chopped3 tablespoons of olive oilSalt Pepper Garlic1 bay leafBisquick – follow recipe and instructions on the box for the dumplingsPut olive oil in a large pot, lightly brown chicken and onion, add vegetables, DO NOT add the peas, save them for later, then add the 3 cans of chicken broth, add seasonings. Cover and bring to a boil, when the soup boils add the dumplings. ( Follow directions on the Bisquick box) Add dumplings by the spoonful. When the dumplings are done remove a few of them and then add the peas, stir them into the soup and replace the dumplings. Serves 4 -6 people. Enjoy!
