Chicken and Dumplings

Well Winter is definitely on it's way, the weather is getting much cooler so it is time for some cool weather foods. Just recently I made one of our favorites, Chicken and Dumplings, it is a comforting tasty dish that my family loves.  The recipe is very easy it takes about 30 minutes.
 Below is the recipe.

  • 3 cans of chicken broth
    3 boneless skinless chicken breasts cut into 1 inch chunks 
    1 cup of carrots small ones or cut big ones 
    3 medium potatoes cut into medium chunks
    1 cup of frozen peas ½ cup chopped onion 
    3 celery stalks chopped
    3 tablespoons of olive oil 
    Salt Pepper Garlic 
    1 bay leaf
     Bisquick – follow recipe and instructions on the box for the dumplings 
    Put olive oil in a large pot, lightly brown chicken and onion, add vegetables, DO NOT add the peas, save them for later, then add the 3 cans of chicken broth, add seasonings. Cover and bring to a boil, when the soup boils add the dumplings. ( Follow directions on the Bisquick box) Add dumplings by the spoonful. When the dumplings are done remove a few of them and then add the peas, stir them into the soup and replace the dumplings. Serves 4 -6 people. Enjoy!
