The Holidays



Well Thanksgiving is done; everyone ate their fill of goodies and went into a food coma. The rest of the week will be filled with leftover turkey sandwiches and the beginning of the shopping frenzy. It seems like it started much earlier this year. Many of the stores started on Thanksgiving Day! I think that is way too early to start, let us enjoy our Thanksgiving first. 

My Thanksgiving was a bit different this year. I usually spend it with my family but they live several hours away and driving on turkey day is exhausting. So this year I cooked a turkey at home for my son and I we had a turkey lunch. And later in the day I got to have dinner at one of my friend’s house, they had a wonderful meal prepared and the company was very nice. After that I went to another friend’s to enjoy dessert and the movie Elf. It was a lovely way to end the day. I went home fat and happy and ready for bed. 

As a tradition in our home we always get the Christmas tree and decorate for the holidays the day after Thanksgiving.  No crazy Black Friday shopping for me! We had a relaxing day sipping on hot cocoa, listening to Christmas music and decorating the tree and the house.  I always enjoy decorating the tree; I have many fond memories of the kids helping me decorate. There are a lot of stories of decorating the tree with the kids.   When my son and godson were little there were a lot of broken ornaments over the years, but there are still many left with fond memories attached. I look forward to those memories each year we decorate the tree. 

Take some time out of the craziness of shopping and daily life to enjoy the holidays, spend some time with family and friends and build fond memories.

Happy Thanksgiving - Oyster Walnut Stuffing Recipe

Oyster and Walnut Stuffing




One stick of butter
1 cup of chopped celery
1 cup of chopped onion
1 tin of smoked oysters chopped
¾ cup of chopped walnuts
2 – 3 cups of chicken or turkey broth
16 cups of stale bread or 2 packages of dressing bread cubes
2 cloves of garlic crushed
Salt and pepper to taste
¼ cup of fresh thyme chopped
¼ cup of fresh parsley chopped

Melt 1 stick of butter in a large pot over medium heat. Add the chopped onions and celery then add the parsley and thyme; add the garlic, add salt and pepper and cook 5 minutes. Add 2 - 3 cups of (start with 2 cups of broth, then add more if needed) turkey or chicken broth and bring to a simmer.   Add 16 cups cubed stale white bread, then pour in the vegetable-broth mixture and toss.
Transfer to a buttered baking dish and dot with butter. Cover and bake 20 minutes at 375 degrees; uncover and bake until golden, 20 more minutes. (Or stuff in your turkey and bake.)

  Serves 8 - 10 and is enough to fill a 12-14 pound turkey

Winter is well on it's way and with it comes colds and the flu.

When my son was is the sixth grade he caught the H1N1 Flu (Swine Flu) then I caught it. My son had a fever of 105 degrees he said he wanted to die he felt so bad. I was pretty miserable myself. We were the first people in our county to get it! We were on quarantine for seven days. I was not prepared, I had no food in the house. Good thing I was on Facebook, I told my friends and one of them had brought food to the house within the hour. What life saver and a blessing my friend was!

For several years after the Swine Flu my son and I had a hard time fighting off the smallest cold and the flu kicked our behinds. Our immune system was very weakened. We just could not fight off the junk.

Then one of my sisters who sells Shaklee products told me about one of their products called NutriFeron. She said she swears by it. I thought hmmm another product making promises that won't live up to the promise. But I was so darn desperate to be healthy again, my son missed a lot of school and it was so difficult for him to get caught up. So I decided to place an order.

I have to say that this product does exactly what is says it will do! I can't imagine going without it during the winter with all the colds and flu flying around. My son and I rarely ever sick and if we do get sick it is not very bad and does not last very long. This product has strengthened our immune system! So if you are tired of getting sick I recommend trying this product.
